Vegetarian Taco Bowls

These taco bowls are easy and healthy.  Sautéed veggies are used instead of meat, so they are very low fat and economical without sacrificing any flavor.

Ingredients:

2 cups sliced crimini mushrooms
1 cup chopped red bell pepper
½ cup chopped onion
1 tbsp of olive oil
¼ cup taco seasoning
1 tsp smoked paprika
½ cup water
I 10oz can re-fried beans or black beans
4 flour or corn tortillas
Shredded lettuce or cabbage

Directions:

If making your own tortilla bowls, follow the heating instructions on your pans and bake until they are browned and crispy. I bake them at 350 degrees for about 15 minutes.  *Tip:  use a fork to poke sides and bottom to prevent bubbles.  If using store-bought tortilla bowls, follow the instructions to heat them up right before serving.

Heat the re-fried beans on low in a small, covered saucepan stirring occasionally.   If black beans are used, be sure to rinse them well and season with salt, pepper and garlic powder.

Pre-heat non-stick frying pan on medium heat for a few minutes and add the olive oil.  Heat the olive oil for 45 sec-1 min. Add the mushrooms, red bell pepper and onion: sauté for 5 minutes, stirring occasionally.  Add the taco seasoning, smoked paprika and water to the veggies and reduce the water by at least half, 5-10 min. (reduce = boil on medium until the water evaporates and sauce thickens).  You don’t want the veggies too saucy or too dry.  This picture shows the beautiful veggies without the sauce.

Construct your taco bowls.  Put the beans on the bottom, then the sautéed veggies, shredded lettuce, and whatever fixins you like.  Serve with Spanish rice.

Fixins:
Pico de gallo
Green taco sauce
Fresh cubed avocado
Fresh chopped cilantro
Sliced olives
Sliced limes
Sliced jalapenos
* Shredded Mexican cheese
* Sour cream

  • Leave out the cheese and sour cream, and these bowls are heart-healthy and vegan.
  • There are plenty of taco bowl pans out there, but I use the Pampered Chef® taco bowl stones.  Virtually no fat needed to cook tortillas crispy and paid for themselves quickly.  I used to buy the packaged ones at the grocery store, but they’re really expensive and it was super frustrating to get them home and find they were broken. Serves 4.  Use any leftovers to make burritos, and you have a healthy lunch.  Mangia!
